{"id":756,"date":"2013-08-28T23:44:32","date_gmt":"2013-08-29T04:44:32","guid":{"rendered":"http:\/\/www.jenniferpickens.com\/blog\/?p=756"},"modified":"2019-10-29T13:01:39","modified_gmt":"2019-10-29T18:01:39","slug":"white-house-chef-makes-healthy-eats-kids-will-love","status":"publish","type":"post","link":"https:\/\/www.jenniferpickens.com\/blog\/white-house-chef-makes-healthy-eats-kids-will-love\/","title":{"rendered":"White House chef makes healthy eats kids will love"},"content":{"rendered":"<p>Recently on the Today Show, White House chef Sam Kass, executive director of the <a href=\"http:\/\/www.letsmove.gov\/blog\/2013\/02\/08\/lets-move-three-years-working-towards-healthier-generation-children\">Let&#8217;s Move initiative<\/a>, shares some nutritious dishes that kids are sure to love.<\/p>\n<div id=\"recipe-52828557\">\n<h3>Recipe: Egg and potato frittata<\/h3>\n<h5>Ingredients<\/h5>\n<ul>\n<li>1\/4 oz butter<\/li>\n<li>1 1\/2 tsp vegetable oil<\/li>\n<li>6 large eggs, beaten<\/li>\n<li>1 cup cheddar cheese, grated<\/li>\n<li>1 3\/4 cups potatoes<\/li>\n<li>2 cups Swiss chard (blanched)<\/li>\n<li>2 tsp salt &amp; pepper<\/li>\n<li>1 cup cooked turkey breakfast sausage (sliced, diced, or chopped)<\/li>\n<\/ul>\n<h5>Preparation<\/h5>\n<div>\n<p>Season eggs with salt and pepper.<\/p>\n<p>Warm saut\u00e9 pan over medium heat. (The pan should not get too hot.)<\/p>\n<p>Add oil and butter<\/p>\n<p>Saut\u00e9 potatoes, Swiss chard.<\/p>\n<p>Pour in eggs to form the base of the frittata.<\/p>\n<p>Place the cooked potatoes, Swiss chard and sausage on frittata when the eggs begin to cook. Distribute evenly.<\/p>\n<p>Add cheese and stir.<\/p>\n<p>Frittata can be finished in a low (300-degrees F) oven or on top of the stove.<\/p>\n<\/div>\n<h5>Serving Size<\/h5>\n<div>\n<p>Makes 8 servings<\/p>\n<\/div>\n<\/div>\n<p>&nbsp;<\/p>\n<div id=\"recipe-52845909\">\n<h3>Recipe: Easy berry smoothie<\/h3>\n<h5>Ingredients<\/h5>\n<ul>\n<li>1 cup frozen strawberries<\/li>\n<li>1 cup frozen raspberries<\/li>\n<li>1\/2 frozen banana<\/li>\n<li>1 cup milk<\/li>\n<li>1 tbsp honey<\/li>\n<\/ul>\n<h5>Preparation<\/h5>\n<div>\n<p>Blend ingredients and serve with whole wheat toast for a healthy breakfast.<\/p>\n<\/div>\n<h5>Serving Size<\/h5>\n<div>\n<p>Makes 2 servings<\/p>\n<\/div>\n<\/div>\n<div><\/div>\n<div id=\"recipe-52845924\">\n<h3>Recipe: Turkey wrap with hummus and cheddar cheese<\/h3>\n<h5>Ingredients<\/h5>\n<ul>\n<li>6 multi grain lavash or tortilla wrap<\/li>\n<li>12 slices roasted turkey breast<\/li>\n<li>1c hummus<\/li>\n<li>6 lettuce leaves<\/li>\n<li>6 slices tomatoes<\/li>\n<li>1c cheddar cheese or any favorites<\/li>\n<\/ul>\n<h5>Preparation<\/h5>\n<div>\n<p>Pre-heat a large skillet over a medium heat.<\/p>\n<p>Spray with olive oil and warm the lavash or tortilla.<\/p>\n<p>Lay out the wraps on a clean work surface.<\/p>\n<p>Spread a spoonful of hummus and layer the turkey, tomatoes, lettuce and cheese.\u00a0 Roll it up and wrap with a parchment paper.<\/p>\n<\/div>\n<h5>Serving Size<\/h5>\n<div>\n<p>Makes 2 servings<\/p>\n<\/div>\n<\/div>\n<div><\/div>\n<div id=\"recipe-52846005\">\n<h3>Recipe: Mixed popcorn with nuts and dried fruits<\/h3>\n<h5>Ingredients<\/h5>\n<ul>\n<li>Bag of popcorn<\/li>\n<li>1\/2 cup almonds<\/li>\n<li>One cup dried fruit<\/li>\n<li>Sprinkle of cayenne (if desired)<\/li>\n<li>2 tbsp vegetable or olive oil (if using unbuttered\/unsalted popcorn)<\/li>\n<\/ul>\n<h5>Preparation<\/h5>\n<div>\n<p>Pop popcorn and pour into a large bowl<\/p>\n<p>Add the almonds and dried fruit<\/p>\n<p>Sprinkle cayenne pepper for a little spice, if desired. Add the oil and a pinch of salt if using unbuttered\/unsalted popcorn.
